How to read it: ply and oven rating are the two specs that separate these pans. Five bonded layers hold temperature more steadily than three; the oven rating only matters if you finish under a broiler or above 500°F regularly. Made In CeramiClad alternatives
CeramiClad 2.0 is Made In's ceramic nonstick: a multi-layer ceramic coating over the same 5-ply stainless body as its Stainless Clad, rated to 550°F, hand wash only, and the 12-inch sits in the premium price tier. That clad body is the main thing you're paying for. The catch is the two-year warranty on a coating that, by its nature, wears.
The Alva Maestro Ceramic Nonstick Frying Pan takes a different approach: a sol-gel ceramic coating on a 4.5 mm forged aluminum body with a stainless induction base, $109 (8"), $119 (9.5") or $129 (11"), oven-safe to 400°F and covered by a 10-year limited warranty. It is lighter (3.1 lb for the 11") and cheaper, and the warranty is five times longer. What you give up is the clad stainless body and 150°F of oven headroom.
