Article: de Buyer Alternatives (2026): 7 Carbon Steel Pans Compared

Alva Black Angus pre-seasoned carbon steel frying pan, a de Buyer alternative

de Buyer Alternatives (2026): 7 Carbon Steel Pans Compared

The best de Buyer alternatives are Alva Black Angus (pre-seasoned carbon steel, oven-safe to 500°F), Alva's hammered Artist pan, Made In Blue Carbon Steel (sold seasoned or unseasoned), Lodge (the budget, American-made pick) and Merten & Storck (pre-seasoned, rated to 660°F). de Buyer Mineral B is a benchmark carbon steel pan with no safety problem. People switch because the Classic ships bare, must be seasoned from scratch, and is limited to brief oven use.

de Buyer has made carbon steel pans in the Vosges region of France since 1830. Mineral B is the pan many cooks measure every other carbon steel pan against, and that's a fair standard. This isn't a takedown. It's a guide for people who like the idea of de Buyer but want something different: a pan that's ready to cook out of the box, a handle that can live in a hot oven, or a lower price. We make three of the alternatives below (Alva), and we'll say plainly where de Buyer and others still win.

How to read it: every pan here is induction-compatible, and none of them can go in the dishwasher. The columns that separate them are the ones that change your first month: whether you season the pan yourself, whether the handle can stay in a hot oven, and how much you pay. Price tiers are for a 10–11" pan: Budget is under $75, Mid-range $75–149, Premium $150–249, Luxury $250+.

Competitor specs checked on each maker's US site in October 2026. Prices change often, so check the maker's site for current pricing. de Buyer was the only maker here to publish steel thickness: it lists 3mm for its 10.25" and 11" Mineral B pans.

Why people look for a de Buyer alternative

  • The Classic's handle limits the oven. de Buyer rates the epoxy-coated Mineral B Classic for "Oven Flash Use Only - Maximum 400℉ for less than 10 minutes." That rules out a long oven finish or a hot oven seasoning cycle. The stainless-handled Mineral B PRO fixes this, at a higher price.
  • It ships bare. The beeswax on a new Mineral B is there to protect it in transit. de Buyer tells you to remove it and season the pan before you cook. Many people enjoy that ritual. Many others just want to make dinner.
  • It's thick, and that means weight. At 3mm, the 10.25" and 11" pans hold heat superbly. Heavy steel is also harder to toss, flip and lift one-handed.
  • It's hand care only. No soap, no dishwasher, dry and oil. That is true of every carbon steel pan here, so it isn't a reason to switch brands. It is a reason to choose carbon steel with your eyes open.

Our pick

Black Angus Carbon Steel Frying Pan

Arrives pre-seasoned, goes in the oven to 500°F with a stay-cool stainless handle, works on induction, and carries a 25-year warranty. Sold in 9.5" and 11", or as a two-pan set. The honest trade-off: it's designed in Belgium and made in China, so if a French-made pan matters to you, de Buyer or Matfer is the answer.

1. Alva Black Angus: best if you want to skip the seasoning ritual

Pre-seasoned · 500°F · induction · 25-year warranty

The Black Angus Carbon Steel Frying Pan answers the two most common de Buyer complaints at once. It arrives pre-seasoned, so you rinse, dry and cook. Its stay-cool stainless handle means it's rated to 500°F in the oven with no time limit, so you can sear a steak and finish it in the oven. The 11" weighs 3.5 lb. It's sold in 9.5" and 11", or as a two-pan set.

The honest trade-off: factory pre-seasoning is a head start, not a finished surface. You still build release by cooking with oil, and you still avoid long acidic simmers until the seasoning is established. It is also made in China, where de Buyer is made in France.

2. Alva Artist: best if you want character and a forged handle

Pre-seasoned · 500°F · induction · 25-year warranty

The Hammered Carbon Steel Frying Pan is the same idea as Black Angus with a hand-hammered finish and a forged stainless handle. It comes in 9.5" and 11", or as a two-pan set. Choose it if the pan will hang on a rail or go to the table.

The honest trade-off: you're paying for looks as much as cooking. If the finish doesn't matter to you, Black Angus cooks the same way for less.

3. Made In Blue Carbon Steel: the highest oven rating

Mid-range price tier · 1200°F · induction · limited lifetime warranty

Made In rates its Blue Carbon Steel pan "Heat Safe to 1200°F" and sells it two ways: pre-seasoned with a shea and coconut oil blend, or unseasoned for people who want to build their own. It's the closest like-for-like to de Buyer for cooks who also grill or use a pizza oven.

The honest trade-off: check the country on the exact version you order. Made In's seasoned pages say Sweden and its unseasoned page says France. See our Made In alternatives if you're weighing the brand more broadly.

4. Lodge Seasoned Carbon Steel: the budget, American-made pick

Budget price tier · oven-safe · induction · limited lifetime warranty

Lodge pre-seasons its carbon steel skillet with vegetable oil and makes it in the USA. It's the cheapest way into carbon steel from a maker with a long track record.

The honest trade-off: Lodge doesn't publish an oven temperature or steel thickness on the product page, and its warranty excludes rust, pitting and flaking. Washing it in the dishwasher voids the warranty.

5. Merten & Storck: pre-seasoned and inexpensive

Budget price tier · 660°F · induction · limited lifetime warranty

Merten & Storck's carbon steel pan arrives pre-seasoned, is rated to 660°F, and has a triple-riveted steel handle. The brand is now sold through GreenPan's US site and is part of the same parent company.

The honest trade-off: we could not find a country of manufacture on its product or care pages.

6. Matfer Bourgeat Black Steel: the other French classic

Sold through retailers · oven-safe · induction · lifetime warranty

If what you love about de Buyer is a bare, French-made restaurant pan, Matfer is the other name to know. It's pressed from one piece of steel, and its welded handle has no rivets for food to collect around. Matfer makes its pans in the Isère region of France.

The honest trade-off: like de Buyer, it ships with a protective coating you scrub off before seasoning it yourself, so it doesn't solve the "ready to cook" problem.

7. Alva Forest: the lightest option, stovetop only

Pre-seasoned · stovetop only · induction · 10-year warranty

The Forest Carbon Steel Frying Pan has a wood handle and is noticeably lighter: the 11" weighs 2.3 lb. It comes in 8", 9.5" and 11". Pick it if weight is your reason for leaving de Buyer.

The honest trade-off: the wood handle means Forest is stovetop only. It cannot go in the oven, and its warranty is 10 years, against 25 years on Black Angus and Artist. If you want an oven finish, choose Black Angus or Artist.

Where de Buyer still wins (because fair matters)

  • Made in France since 1830. If country of manufacture is part of why you buy, de Buyer and Matfer are the picks here.
  • Thick steel, stated plainly. de Buyer publishes 3mm for its larger Mineral B pans. Thick steel holds heat through a crowded pan of steaks better than thin steel does.
  • A blank canvas. Some cooks prefer to build seasoning from bare steel. Mineral B gives you exactly that.
  • The PRO handle. If you like everything about Mineral B except the oven limit, the stainless-handled Mineral B PRO is oven-safe, so you can stay with de Buyer.

How to choose

  • You want to cook tonight, not season first. Alva Black Angus or Artist, Lodge, Merten & Storck, or Made In's seasoned version.
  • You need a long oven finish. Black Angus or Artist (500°F), Merten & Storck (660°F), Made In (1200°F), or de Buyer's own Mineral B PRO.
  • Weight is the problem. Alva Forest, provided you only cook on the stovetop.
  • French-made matters. Stay with de Buyer, or try Matfer.
  • You're new to carbon steel. Read how to season a carbon steel pan and how to fix a rusty one before you buy. If you're still choosing a material, compare carbon steel vs cast iron and carbon steel vs nonstick.

Frequently asked questions

What is a good alternative to de Buyer Mineral B?

It depends on what you want to change. To skip seasoning from bare steel, choose a pre-seasoned pan such as Alva Black Angus, Lodge or Merten & Storck. For long oven use, Alva Black Angus and Artist are rated to 500°F, Merten & Storck to 660°F and Made In to 1200°F. To stay with a French-made bare steel pan, Matfer Bourgeat is the closest match.

Is de Buyer Mineral B oven safe?

It depends on the handle. de Buyer limits the Mineral B Classic, with its epoxy-coated handle, to flash oven use at a maximum of 400°F for less than 10 minutes. The Mineral B PRO has a cast stainless handle, and de Buyer describes it as oven-safe.

Is de Buyer Mineral B pre-seasoned?

No. The beeswax on a new Mineral B pan protects it in transit. de Buyer says to remove the wax and season the pan before your first use.

Is there a pre-seasoned carbon steel pan that can go in the oven?

Yes. Alva Black Angus and Alva Artist both arrive pre-seasoned and are oven-safe to 500°F. Merten & Storck is pre-seasoned and rated to 660°F, and Made In sells a pre-seasoned Blue Carbon Steel pan rated to 1200°F. Alva Forest is pre-seasoned too but has a wood handle, so it is stovetop only.

Can carbon steel pans go in the dishwasher?

No. None of the carbon steel pans in this guide is dishwasher-safe. The dishwasher strips seasoning and causes rust. Wash by hand, dry completely, and wipe on a very thin layer of oil.

The bottom line

de Buyer Mineral B is a superb pan, and the case for an alternative is about convenience, not quality: no seasoning from scratch, a handle that can stay in the oven, or less weight. For a pre-seasoned pan you can sear on and finish in the oven, start with the Alva Black Angus, or browse all Alva carbon steel. Free U.S. shipping over $99.
