Should I buy a flat or round bottom wok?
Flat, unless you own a dedicated wok burner. A round-bottomed wok needs a ring or a purpose-built burner to sit safely, and it will not work on induction at all. A flat base makes contact with every Western hob including induction, which is why ours is built that way.
Do you need to season a carbon steel wok?
Yes, the same as any carbon steel pan — it arrives pre-seasoned but wants a proper season before its first stir-fry. Woks are slightly easier than skillets because you can do it on the stovetop, rotating the pan through the flame until the metal darkens evenly.
Why is carbon steel the best material for a wok?
