What is this cookware best for?
The 12-inch wok is made for high-heat stir-fries, seared vegetables, noodles and quick meals that benefit from tossing ingredients frequently.
Why choose carbon steel instead of nonstick?
Uncoated carbon steel is built for responsive heat and a strong sear without a synthetic nonstick coating. With proper care, its seasoned cooking surface develops over time.
Can I use it on induction or in the oven?
It works on gas, electric and induction cooktops, but Forest's wooden-handled cookware is not oven safe. Use it on the stovetop only.
Is carbon steel a hassle to look after?
Less than its reputation. After cooking, rinse with hot water, dry it on the burner for a minute and wipe a drop of oil around the inside: about a minute of work. Skip the dishwasher and never leave it soaking. The seasoning darkens and gets slicker with every cook, and if you ever forget and find a spot of rust, a scrub and a fresh wipe of oil bring it straight back. Nothing is ruined.
Does a flat-bottom wok work on an electric or induction stove?
Yes. The flat base sits directly on the cooktop, so it heats properly on electric coil, ceramic glass and induction as well as gas, with no wok ring needed. A round-bottom wok really only works over a gas flame with a ring.
