Which surface should I use for which foods?
Use ceramic nonstick for eggs, pancakes, delicate fish and other foods where easy release matters. Use uncoated stainless for steaks, chicken, browning, deglazing and pan sauces.
Does everything work on induction and in the oven?
All cookware works on gas, electric and induction. Stainless pieces up to 500°F / 260°C; ceramic pieces up to 400°F / 205°C.
Can I really cook with it during the 45-day trial?
Cook with both surfaces in your own kitchen for 45 days from delivery. If the set is not right for you, start a return within that window. Used cookware is welcome in reasonable condition with all original parts and accessories; Alva provides one prepaid return label per order.
How do I care for both surfaces?
Use low-to-medium heat and soft utensils on ceramic. For stainless, preheat gradually, add oil once warm and allow proteins to naturally release after searing. Do not use one care routine for both surfaces.
