The Best Cast Iron Skillet in 2026: Expert Reviews & Buying Guide
Enameled cast iron, no seasoning ever, verified PFAS/PTFE/PFOA-free, lifetime warranty. Free U.S. shipping over $99.
Cast iron earns its place for one reason: unbeatable heat retention for searing, frying, and baking. But traditional bare cast iron comes with homework — seasoning, careful drying, rust patrol. In 2026 you have a choice: classic bare skillets, or enameled cast iron that delivers the same heat performance with none of the upkeep and a non-reactive porcelain surface.
Straight answer: we don’t make a bare cast iron skillet
Worth saying up front, because it will save you scrolling. Alva does not make a traditional seasonable cast iron skillet. If that is specifically what you want, buy a classic brand — they are inexpensive and they last forever.
What we make is enameled cast iron: Dutch ovens, a grill pan, a roasting pan, a tagine and a fondue set. Same heavy iron core and heat retention, fused porcelain enamel instead of seasoning. And if what you actually want is a searing pan that needs no seasoning, the honest answer is that our carbon steel or 5-ply stainless frying pans will serve you better than any Dutch oven — more on that below.

If you want a searing pan, not a pot
This is the honest steer. A Dutch oven is a braising vessel; it is not what you want for a weeknight steak. For searing with no seasoning ritual, look at Forest carbon steel (from $99, stovetop-only, seasons naturally as you cook) or the Maestro 5-ply stainless frying pan (from $129, oven-safe to 500°F, dishwasher-safe, lifetime warranty). Both sear as hard as cast iron and weigh considerably less.
Why enameled cast iron wins for most home cooks
- Zero seasoning — usable out of the box; performance never depends on upkeep.
- Won’t rust — no hand-drying ritual, no vinegar restoration.
- Non-reactive — cook tomatoes, wine and citrus freely, with no metallic taste.
- No nonstick coating — so no PFAS or PTFE by design.
- One pan, stovetop-to-oven-to-table, with a lifetime warranty.
What about traditional bare cast iron?
If you specifically want a bare, seasonable skillet, classic options exist — just know you’re signing up for seasoning and rust care (see how to season cast iron). The trade-off is exactly what enameled cast iron removes.
Care
Bare cast iron needs seasoning and careful drying — see how to clean cast iron. Enameled cast iron needs none of it — wash by hand with warm soapy water and a soft sponge, dry, done. Frequently asked questions
Is enameled cast iron non-toxic?
Yes. Enamel is fused glass and there is no nonstick coating on it, so there is no PFAS or PTFE by design, and nothing that can wear off into food. It is also non-reactive, which is why acidic cooking is fine in it. See our safety standards.
Does enameled cast iron sear as well as bare cast iron?
Very nearly, and the difference is technique rather than material. Both have the same iron mass, so both hold heat when cold food hits them. Enamel is slightly less slick than a well-built seasoning, so use a little more fat and give the pan a proper preheat before the food goes in.
Do you need to season enameled cast iron?
No — that is the entire point of it. There is no bare iron exposed, so there is nothing to season and nothing to rust. You can wash it with soap, leave it in the rack to dry, and cook acidic food in it on day one.
Does Alva make a cast iron skillet?
Not a bare, seasonable one. Our enameled cast iron range covers Dutch ovens, a grill pan, a roasting pan, a tagine and a fondue set. The 11-inch grill pan is the closest to a skillet; if you want a flat searing pan, our carbon steel or 5-ply stainless frying pans are the better match.
Can enameled cast iron go in the dishwasher?
We do not recommend it. The enamel survives the detergent perfectly well, but chips come from heavy pieces knocking against a loaded rack, and that is what ends an enamelled pan’s life. Hand-wash with a soft sponge and skip abrasive pads.
What happens if the enamel chips?
A chip on an outside surface or the rim is cosmetic. A chip through to the bare iron on the cooking surface means that spot will rust and food will catch there, so retire the piece from cooking use. Avoiding thermal shock — no cold water into a hot pan — prevents most of it.
The bottom line
For cast-iron heat without the maintenance, the Nori enameled range is the pick — start with the 11-inch grill pan at $149 for searing, or the 5-Qt Dutch oven at $249 for braising.
