Will it become more nonstick?
A well-maintained patina can improve natural food release over time, but carbon steel is not a synthetic nonstick surface. Cooking technique and seasoning still matter.
Does it work on induction and in the oven?
It works on gas, electric, ceramic and induction. It is stovetop only.
