What is carbon steel cookware good for?

High-heat searing, stir-fries, and anything you would cook in cast iron — at roughly half the weight. It heats fast, takes a hard sear, and builds a natural nonstick patina with use.

Does carbon steel need seasoning?

Carbon steel vs cast iron — which should I choose?
