5-Ply Stainless Steel Cookware Guide: What It Is & Why It Matters

5-ply stainless steel cookware is made from five bonded layers of metal — typically a stainless cooking surface, three aluminum or aluminum-alloy conductive cores, and a stainless induction-ready exterior. The extra cores give it more even heat and better warp resistance than 3-ply, which is why it's the standard for serious searing, sauces, and browning. It's fully clad edge to edge, has no coating to wear off, and works on every stovetop including induction.

What does "5-ply" actually mean?

"Ply" refers to bonded metal layers. Stainless steel on its own is a poor heat conductor, so quality cookware sandwiches conductive aluminum or copper between stainless faces. In a fully-clad 5-ply pan, those layers run all the way up the sides — not just across a disc on the bottom — so heat spreads evenly across the whole surface, not just the center.
