Ingredients

Serves 6.

  • 1 boneless beef chuck roast, 3½ to 4 lb
  • 1½ tsp kosher salt, plus more to taste
  • 1 tsp freshly ground black pepper
  • 2 tbsp neutral oil (avocado or vegetable)
  • 2 yellow onions, cut into thick wedges
  • 4 garlic cloves, smashed
  • 2 tbsp tomato paste
  • 1 cup dry red wine (or an extra cup of beef broth)
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 2 bay leaves
  • 4 sprigs fresh thyme (or 1 tsp dried)
  • 4 carrots, peeled and cut into 2-inch pieces
  • 1½ lb Yukon Gold potatoes, halved (quartered if large)
  • 2 tbsp all-purpose flour mixed with 3 tbsp cold water (optional, for thickening)
  • Chopped fresh parsley, for serving

Instructions

  1. Heat the oven to 325°F. Pat the chuck roast completely dry with paper towels and season all sides with the salt and pepper. Let it sit at room temperature while the oven heats, about 20 minutes.
  2. Set the Dutch oven over medium-high heat and add the oil. When it shimmers, add the roast and sear without moving it for 4 to 5 minutes per side, until deeply browned on all sides, about 15 minutes total. Transfer the roast to a plate.
  3. Reduce the heat to medium. Add the onions and cook, stirring, until softened and lightly browned, about 5 minutes. Add the garlic and tomato paste and cook 1 minute, stirring, until the paste darkens slightly.
  4. Pour in the wine and scrape the bottom of the pot with a wooden spoon to release all the browned bits. Simmer until reduced by half, about 3 minutes.
  5. Stir in the beef broth, Worcestershire sauce, bay leaves, and thyme. Return the roast and any juices to the pot. The liquid should come about halfway up the meat.
  6. Bring to a simmer, cover with the lid, and transfer to the oven. Braise for 2 hours.
  7. Remove the pot, tuck the carrots and potatoes into the liquid around the roast, cover, and return to the oven. Braise until the beef shreds easily with a fork and the vegetables are tender, 1 to 1½ hours more (3 to 3½ hours total).
  8. Transfer the roast and vegetables to a platter and tent loosely with foil. Discard the bay leaves and thyme stems. Skim excess fat from the surface of the liquid.
  9. For a thicker gravy, set the pot over medium heat, whisk in the flour slurry, and simmer 2 to 3 minutes until glossy. Taste and adjust salt and pepper.
  10. Slice or shred the beef against the grain, spoon the gravy over everything, and finish with parsley.

Tips for the best Dutch oven pot roast

  • Buy chuck. Chuck roast has the collagen and marbling that melt into a silky braise. Lean cuts like round or sirloin dry out.
  • Do not rush the sear. A dry surface, a hot pot, and patience give you the browned crust that flavors the whole dish.
  • Keep the liquid halfway. Fully submerging the roast boils it instead of braising it. Half-submerged with the lid on is the sweet spot.
  • Test for doneness by feel. Pot roast is ready when a fork twists in with almost no resistance, usually once the meat's internal temperature is well past 200°F. If it is still tough, it simply needs more time.
  • Make it ahead. Cool, refrigerate overnight in the pot, lift off the solidified fat, and reheat gently at 300°F. The flavor deepens.
  • Care. Let the enameled pot cool before washing, then hand-wash with warm soapy water. For stubborn bits, simmer a little water and baking soda for a few minutes.

Frequently asked questions

Can I make this pot roast on the stovetop instead of the oven?
Yes. After adding the roast back to the pot, keep it covered over the lowest heat that maintains a bare simmer and follow the same timing, checking every 45 minutes and adding a splash of broth if the liquid drops too low. The oven is more even and forgiving, which is why we prefer it.

Why is my pot roast tough?
It almost always needs more time, not less. Collagen in chuck does not break down until the meat has spent a good while above roughly 190°F. Cover it, return it to the oven, and check again in 30 minutes.

How do I store and reheat leftovers?
